Herbaceous & Creamy: Meet Your New Favorite Tahini Sauce

Green Herb Tahini Sauce

Ingredients:

1/2 cup tahini

1/2 cup fresh parsley leaves

1/2 cup fresh cilantro leaves

1/4 cup fresh chives, chopped

1 clove garlic, minced

Juice of 1 lemon (about 2 tablespoons)

1/4 cup water (adjust as needed for consistency)

Salt and pepper, to taste

Optional: 1 tablespoon olive oil for extra creaminess

Instructions:

Prepare the herbs:

Wash and dry the parsley, cilantro, and chives thoroughly to prevent excess water from diluting the sauce. Chop them roughly.

Blend ingredients:

In a blender or food processor, add the tahini, parsley, cilantro, chives, minced garlic, and lemon juice. Blend until smooth.

Adjust consistency:

Add water a little at a time, blending after each addition, until you achieve a smooth, pourable consistency. For a thicker sauce, add less water; for a thinner dressing, add a bit more.

Season to taste:

Add salt and pepper to your liking. You can also add a bit of olive oil for extra smoothness.

Serve or store:

Use immediately, or store in an airtight container in the fridge for up to a week.

Preparation Tips:

Freshness matters:

Use fresh, vibrant herbs for the best flavor and a rich green color.

Balance the tahini and water:

Tahini thickens as you blend, so adding water gradually helps control the texture.

Consider variations:

You can add other herbs like basil, dill, or tarragon for a different twist.

Storage tip:

The sauce thickens when chilled, so you may want to stir in a little water before serving leftovers.
